Caviar has starch?
Hello. I'm on a very low starch diet temporarily and was surprised to see that 2 teaspoons of caviar, according to NCCDB, has 0.4 grams of starch. The brand I eat is Holland House, which does have stabiliser 415 listed (Xanthan gum) which is a polysaccharide made from a bacterial coat. But polysaccharides aren't always starches though.
Is the Xanthan gum considered to be the starch, or does the caviar itself contain starch?

Unfortunately, the USDA and the NCCDB do not specify in what the Caviar is canned in, they assume the most average method of preparation for foods in their databases.
It is most likely that caviar is canned with certain stabilizers that would add a small amount of starch.
