Do I Add my device calories burned, or does my activity level account for that?
Simply, when I get to the end of the day, should I put my calories burned (from an unsupported device) into Cronometer as a custom exercise, or does my activity setting (Sedentary...) take activity into account? Does Sedentary assume I'm walking 5000 steps and burning 250 calories? If I manually add my activity, am I double counting my burn?

You can decide how you would like to do this. You have 2 options in your case:
1. Estimate your activity level and exercise: Choose the most appropriate level that we have listed for ALL your daily activities
2. Use a pre-set activity level to capture your general daily activity and log your exercise separately. You can learn more about BMR and setting activity level here: https://cronometer.zendesk.com/hc/en-us/articles/360018472272-Profile-Settings#h_36127802021545255527429
