Home dehydrated food
I dry a lot of fruits and vegetables in a home dehydrator , so there are none of the often added preservatives or other ingredients that you might find in store brands. Is there any nutrition label information for homemade dried products? If not, does anyone have a good suggestion 4 converting fresh items to dried , keeping in mind differences in water, fiber, vitamins/minerals etc? Thank you!

An option would be to create a recipe with 2 items: the fresh fruit or vegetable with the weight before drying, and as the second recipe item put minus water with the weight equal to the weight reduction caused by drying. E.g.: 1000 g Cucumber, Raw, With Peel; -900 g Water, Distilled.
Unfortunately, this doesn't solve the change in levels of vitamins caused by drying.
