What do the icon/symbols mean?

Hello,

I heard this website referenced on a podcast and am glad I decided to check it out. My question is what do the icons mean? When you add a food you can see them. Sometimes it a red laboratory flask, other times its a blue box (with whit lines). The both have letters at the end of them, NCDB , CRDB, ESHA.
