greenish banana - sugar content?
The internet (and my taste buds) tell me that a relatively green banana has less sugar than a ripe yellow banana. But the cronometer NCCDB reference only lists "banana, raw", which I interpret as a ripe banana. (12.23g Sugar per 100g of banana)
In spite of the many online assertions about green bananas having lots of starch and not so much sugar, I haven't been able to find any actual numerical data for green banana sugar content.
Anyone have reliable data?

I sort of want to do some science and determine the entire macro and micronutrient profile of bananas based on color and origin. Current research data provide some insights, but no complete profile of specific bananas that we find in US markets.
