I know what IU means, and mg of course, but what is that other symbol which looks like parts of letters?

I think you might mean this symbol: μg.

This stands for micrograms; there are 1000 μg in 1 mg.

Where do I make changes to measurements? IE I want to measure in cups, oz, etc...
