What do the trimmed value mean on beef or pork?
Some will say "trimmed to 0“ or trimmed to 1/8"“. Which one do I pick?
I buy Costco rib eye steaks so I have no idea which to use.

Hey Boo!
They are referring to how much visible fat is along the edge of these cuts of meat. So if you remove as much of the fat as possible - trimmed to 0 inches.
If there is a layer on the edge of the fat you might choose the 1/8" option.
