Most people wanting vegan protein shakes turn to protein powders (often based on pea, soy, brown rice). I make smoothies from spinach, chard, kale, fruit, and unflavored pea protein. If you want more of a shake, there are plenty of commercial products that are vegan just add water powders (such as the Orgain brand).
If you're limiting this to whole plant based foods, getting a really good level of protein (> 20% of calories from protein) and making it tasty is going to be very tough.
