What does separable lean & fat and separable lean only mean?

What are the differences and which entry do I use if I'm buying steaks from supermarket?

Hi there!
Separable lean means the meat only - remove the fat, bone, fat,
connective tissue, etc. Use this one if you are trimming off all the fat from your cut of meat.Separable lean and fat is the meat and the fat eaten, with the bone and connective tissue removed.Use this one if you are leaving some or all of the fat on your steak.
