Unlock Full Access to the NCCDB's Food Components

It is my understanding that Cronometer has a license to the NCC database. So, I'm unclear as to why we as users aren't given full access to every food component that is measured for that database. According to the NCC, they measure everything an enormous number of things:

I would love to be able to track phytic acid, oxalic acid, betaine, all forms of B6, and animal vs plant polyunsaturated fatty acids. Is there a practical reason why we aren't given access to those details?
