If I need X food to finish my day
sometimes I find I am behind on certain daily nutrition targets - - frequently it's fiber. Is there a way to ask Cronometer _"hey, what's a food I can eat now to get 30g more of fiber but also low in fat"? _

The closest that would be is to use the Oracle. You can select your nutrient, press search and it will give you a list of foods that are high is the selected nutrient.
The DOWNSIDE of the Oracle is that is uses a huge database for the results. I find it often tells me foods that I've never consumed....or sometimes never even heard of!
It would be better if it would display foods from the foods that you have logged - ones that you typically consume. Or have an option to do both/either. -
You could try using the Crono coach, sometimes that is helpful to me.
