I do not understand how to read these gauges. I searched for an answer but did not find anything. Is the red arrow supposed to be pointing to the middle of the green area for optimal ratios?

That's right - the green area of the gauges is highlighting the recommended ratios for the corresponding nutrients.

Reading them isn't intuitive. The further clockwise the gauge, the higher the proportion of the left-hand item even though the pointer is going away from it.
I think the labels in the gauges are inverted

The gauges are meant to display the ratio of the two nutrients listed below each gauge.
For example, an omega 6: omega 3 ratio of 4:1 means that for every 4 grams of omega 6 there is 1 gram of omega 3.
You can look at the gauge above as the value of the first nutrient divided by the value of the second nutrient. Using the same example 4/1 = 4. This number is displayed at the bottom of the gauge. Increasing omega 3 will reduce this number, or if you are planning your food for the future, reducing omega 6 will also reduce the ratio.

It would be great if the oracle could give you tips on what to eat to balance the nutrient ratios
