So is the aim to get as high a percentage as poss in all of the nutrient catagories?
For most nutrient targets, hitting 100% means you are achieving the recommended dietary allowance (RDA). The RDA is the amount of a nutrient that researchers and policy makers think is enough to prevent deficiency symptoms and keep you healthy. Some nutrients also have a tolerable upper limit, above which there is a risk of toxicity symptoms. In general, you want to aim for 100% of your minimum target and stay below the maximum target, if there is one.

So do we have to set our own targets per day?
The default targets are based on the Dietary Reference Intakes (RDIs) from the USDA.
They take into account your sex, age and life stage. These values were determined for healthy populations.
You might like to customize your nutrient targets to match those of another country's recommendations, or speak to your health care provider if you have unique dietary needs.
