In general, are database beef weights based on raw or cooked state?

Hi there,

It depends on the source. NCCDB and USDA are cooked, unless otherwise specified in the name (like raw or fresh).

Branded products from CRDB, ESHA, USDAB (UPC), etc. these are up to the manufacturer so it will vary from food to food.
