Iodine
Iodine is a rather important nutrient.
Is there any way this could be added and tracked under the mineral section of the food diary?

@TimC00k, Some nutrients such as Iodine are not visible by default as they are not generally available from our nutrition data sources. Since there is very little data for these nutrients in our database, your tracked values may be significantly lower than they actually are.
However, if you still wish to track them, settings can be changed by following these steps:
1) Select the 'Profile' Tab
2) In the 'Nutrient Targets' section, and find the nutrient
3) Select the ''Visible'' check box next to the nutrientHilary

A can of navy beans has all of the iodine you need.

It's possible for canned foods to provide some iodine, provided that the salt that is added to the can is iodized. However, in North America, most food companies don't use iodized salt in processing; there's really no way to know if there is iodized salt or not in the food unless you call the company.
