Sprouted Seeds

Hilary are there Nutritional Facts for sprouted Seeds like Chia etc as many of the foods I use are sprouted - Flax, Chia , Sunflower, Pepitas etc Where to get this information please

  • @Rhonda We don't have good data from our lab analyzed sources NCCDB and USDA. You can find some nutrition information on brand name, packaged sprouted seeds contained in our database, however these nutrition facts will be limited to those nutrients required to be on labels.
    @Susan_RD_101 do you have any thoughts on general differences between sprouted and un-sprouted seeds?

    In general, sprouting seeds makes the zinc/iron content more bioavailable (i.e. easier for our body to absorb) because it lowers the content of phytic acid. However, sprouting doesn't change the actual nutrient content of the food.

    I have soaked 55g (1/4 cup) of Mung Beans - Day 2 approx they weigh 130g Have a look at Cronometer - don't know how to add pic to this so will forward in email to Cronometer - very big difference in what shows up on screen. Then played with numbers to get them equivalent - still big discrepency. What to do??

    The entry for 'Mung Beans, Mature Seeds, Raw' represents the raw seeds, not the dried ones. We unfortunately do not have the nutritional values for the dried seeds.

    To get the most accurate nutritional values for your sprouted mung beans, I would recommend weighing your mung beans once they are hydrated and sprouted, and using the entry 'Mung Bean Sprouts, Raw' in your food diary.
