WonderMill and beans
so I've been grinding my beans into flour since 2011 when i got tired of bean soup all the time.
just wondering if i'm the only one that's ever had that idea, I've looked far and wide. and never seem to get more good ideas.
i mix the bean flour with vital wheat gluten and make things like cinnamon rolls with small red's (not kidney that would be toxic). i make doughnuts with lentil flour/gluten. pita pockets for a spinach sandwich with navy beans.
the only reason i'm posting this is i have trouble with the gluten breaking down after about 45 min. and would love to know if someone that isn't gluten free (all google ever tells me ), has any advice.

this is the ingredient list, you'd have to veganize how ever you would. but just basicly replace white flour with the bean flour and vital wheat gluten, and the extra yeast is for a 'super' fast rise because beans break down gluten...(adds a good bit of folate and thiamin to it though)

more things to do with bean flour and gluten....i made lentil flour, added 84g's to 42g's gluten, added one egg, little bit off water, and got lentil alfredo!
the lentil noodles on their own have over 29g's protein, and 12g's fiber! not to mention the 56g's parmesan cheese added...i used some active dry yeast also in the sauce for folate/thiamin....
